The Best Fruit Pizza

This past weekend we had the privilege of presenting this recipe in a local cooking show and were met with an incredibly favorable response, so we thought we would share it with our readers.

Individual Cranberry Yogurt Fruit Pizzas

We love the idea of setting up a decorative, interactive fruit pizza bar for your next gathering. All of the easy prep can be all done ahead of time, and it lets your guests or family members get in on the fun. Seriously, who doesn’t love playing with food?

For the Crust:

Prepare one package of Soup of Success Cranberry Yogurt Cookie Mix. It is filled with a mouthwatering blend of cranberries, golden raisins, and yogurt chips.  Allow them to cool completely. This will make about 2 dozen cookies.  (Plus these are cookies for a cause!  Each mix sold helps pay training wages for women who are struggling with difficult life situations and striving for self-sufficiency.)

Topping:

1 (8 oz.) package cream cheese

1 (8 oz.) container Cool Whip

1 tsp. vanilla

1/2 cup powdered sugar

For the topping: In a large bowl, blend above ingredients with a mixer until nice and smooth.

You will also need assorted fruits to top the pizza.  Be creative – strawberries, grapes, kiwi, mandarin oranges, raspberries, blackberries, pineapple, peaches, apples, blueberries – pick your favorites!

To assemble the pizza: Spread the cooled cookies on a platter with the topping mixture in a separate  bowl.  Arrange fruit in separate small bowls and set it all out as your dessert bar.  Encourage everyone to make their own fruit pizza just exactly the way they want. It is a great way to engage your guests and have them get in on the fun.
